Healthier version by suplimenting applesauce for some of the butter and wheat flour for some of the all purpose flour.

Recipe Ingredients for Banana Pecan Muffins

1 cup Whole Wheat Flour
1 cup All Purpose Flour
1.5 teaspoon Baking Soda
0.25 tsp Salt, Table
4 small (6" to 6-7/8" long) Bananas
0.5 cup, chopped Pecans
0.75 cup, packed Sugars, Brown
6 tbsp Unsalted Butter
2 large Egg, Whole
0.5 cup Apple Sauce Unsweetened Organics
1 tsp Vanilla Extract

Recipe Directions for Banana Pecan Muffins

  1. Mix all dry ingredients in a seperate bowl, set aside.

  2. Mash all the bananas until soft but still chunky. Place half the banana mash into an electric mixer with the sugar and mix well.

  3. Add eggs, melted butter, applesauce, and vanilla in the banana sugar mixture. Once incorporated add the dry mixture to the wet mixture.

  4. Fold in the rest of the bananas and pecans. Spoon into 12 muffin tray that is well greased.

  5. Bake at 375 for 25 minutes or until a knife comes out clean.
