You can add 1 cup Hersheys Special Dark chocolate chips instead of or in addition to the pecans.

Recipe Ingredients for Banana Pecan Muffins

3/4 cup egg substitute
1/4 cup canola oil
1 cup unsweetened applesauce
4 bananas, mashed
3 tsp vanilla
2 cups whole wheat flour
2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
3 tbsp cinnamon
1 cup pecans, chopped and toasted

Recipe Directions for Banana Pecan Muffins

  1. Mix all ingredients except pecans until well blended.

  2. Fold in pecans and chocolate chips (if using).

  3. Spoon into muffin cups and bake at 350 for 20-30 minutes.

  4. When done, remove from oven and place on a wire rack to cool.

  5. Store in the refridgerator.
