Higher protein version of banana pecan muffins.

Recipe Ingredients for Banana pecan muffins

2 cups mashed bananas
2 cups unsweetened applesauce
1 cup skim milk
4 egg whites
1/2 cup ground flaxseed
2 tbsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 tsp vanilla
1 1/2 cup whole wheat flour
1/2 cup pecans, chopped
2 scoops whey protein powder

Recipe Directions for Banana pecan muffins

  1. Preheat oven to 375. Spray 3 standard 12 muffin tins.

  2. Combine bananas, applesauce, egg whites, milk, and flax seeds in one bowl, rest of ingredients in other bowl. Pour wet ingredients into dry ingredients and combine. Fill muffin tin 3/4 full and bake for 15-20 min.
