Recipe Ingredients for banana pecan bread/muffins

4 Bananas (Medium)
2 eggs
1/4 cup sugar
1 cup margarine (fat free, Move over butter)
2 cups flour (whole wheat unbleached)
2 tsp vanilla
1 1/2 tsp baking soda
1/2 cup pecans (pieces optional)
1/4 tsp nutmeg (ground)

Recipe Directions for banana pecan bread/muffins

  1. preheat oven 350

  2. Mash bananas

  3. cream sugar and margarine

  4. add eggs, bananas, vanilla, nutmeg mix till blended

  5. add flour, baking powder, and pecans (optional)

  6. spoon into greased and floured muffin cups ( you can use paper cup liners or loaf pan

  7. bake muffins 15 minutes loaf 25-30 minutes

  8. check with tooth pick for doneness
