Delicious pancakes that make great use of too ripe bananas. We love them topped with fresh stawberries and whip cream.

Recipe Ingredients for Banana Pancakes

1 c flour
1 tsp sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 c milk
2 T oil
2 bananas, mashed

Recipe Directions for Banana Pancakes

  1. Combine flour, sugar, baking powder and salt in a bowl.

  2. In a seperate bowl beat egg. Add milk and oil and bananas. Mash bananas with a potato masher.

  3. Add flour mixture. Batter will be lumpy.

  4. Cook on griddle until golden brown.

  5. 1/2 C battter equals six large pancakes.
