Makes 2 large pancakes, but can be made into smaller ones. Cook one pancake at a time.

Recipe Ingredients for Banana Pancake

4 egg whites
1/3 c. oatmeal
1 medium banana
2 T. olive oil
1 T. vanilla extract
1/2 tsp. cinnamon

Recipe Directions for Banana Pancake

  1. Mix in a blender all ingredients, except olive oil.

  2. Add 1 T. olive oil in pan, and heat pan on stove.

  3. Slowly add one half of the pancake mixture into the pan.

  4. Watch the bubbles for cooking. It cooks about 3 minutes.

  5. Flip the pancake over when it's ready and cook a few more minutes.

  6. Pour another T. of oil into the pan and cook the second pancake.
