Recipe Ingredients for Banana Oatmeal Raisin Muffins

1 cup whole wheat flour
1/3 cup flaxseed
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup oats
1/2 cup raisins
1 egg
1/4 cup unsweetened applesauce
1/3 cup dark brown sugar
1 cup bananas, mashed
1 tsp vanilla

Recipe Directions for Banana Oatmeal Raisin Muffins

  1. Grease muffin tin and preheat oven to 400 degrees F.

  2. In a small bowl, combine flour, baking powder, baking soda and cinnamon.

  3. In a larger bowl, combine egg, applesauce, mashed banana, vanilla and brown sugar. Stir well.

  4. Add flour mixture to liquids and stir enough to moisten; add oats and raisins.

  5. Pour into prepared muffin tin. Bake for 20-25 minutes.
