Recipe Ingredients for Banana Oatmeal Muffins

3/4 c. water
1 c. quick oats
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. sugar
3 egg whites
1/2 cup applesauce
2 bananas, mashed (1 c.)
2 tbsp. sugar
1/2 tsp. cinnamon

Recipe Directions for Banana Oatmeal Muffins

  1. Mix water and oatmeal and set aside.

  2. Mix dry ingredients.

  3. Mix egg, banana, oil and oatmeal mixture.

  4. Add to dry ingredients, stirring only until moistened. Spoon into 1 dozen muffin tin.

  5. Sprinkle with cinnamon and sugar.

  6. Bake 18 to 20 minutes in a 400 degree oven.
