Makes 16 servings



Combine rolled oats, Yogurt and Milk and let sit for 10 minutes. Mash ripe bananas. Add applesauce, lightly beaten eggs and mashed bananas to wet ingredients. Grind second batch of oats into flour. Combine rest of dry ingredients with flour. Add wet ingredients to dry ingredients and stir well. Heat oven to 400F and bake 17 minutes or less.

2 1/2 cups rolled oats
1 container Greek Yogurt
1 serving Skim Milk Fat Free
1/2 cup light brown sugar
1 cup applesauce
2 Egg, Whole
4 bananas large
3 cups oat flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
4 tsp. baking powder
2 tsp. baking soda
