These muffins are a tasty snack. I've cut back on the eggs, sugar, salt and oil and added the whole wheat flour to make them a healthier choice. I might try cutting the sugar back even more yet! These are also great as mini muffins (one mini muffin is about 15 g or half an ounce).

Recipe Ingredients for Banana Oatmeal Muffins (Original recipe from "Muffin Mania" cookbook)

1 cup Rogers All Purpose Flour
1 cup Rogers Bread Flour "Whole Wheat Bread Flour"
3/10 cup Sugars, Granulated
1 tsp Pure Baking Soda
2 cup, sliced Bananas
1 large Egg, Whole
1 cup dry Old Fashioned Quaker Oats
1 cup Milk, Nonfat, Fluid
1/4 cup Sunflower, Linoleic, (Hydrogenated) Oil
1/2 tsp Salt, Table
5 teaspoon Baking Powder

Recipe Directions for Banana Oatmeal Muffins (Original recipe from "Muffin Mania" cookbook)

  1. Combine oats and milk and set aside

  2. In large bowl, mix flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg.

  3. To soaked oat mixture, add oil, eggs, vanilla and bananas.

  4. Add wet mixture to dry ingredients and stir only until the flour is moistened.

  5. Fill greased muffin cups and bake at 375 degrees F for 20 minutes.
