Delicious cookies that are moist and plump. Our son calls it his "breakfast cookie" when he went to college.

Recipe Ingredients for Banana Oatmeal Cookies

1 cup bananas, mashed
1/4 cup walnuts, finely chopped
1 1/2 cups oatmeal, dry, quick oats
1/2 cup granulated sugar
1/2 cup butter, creamed
1/4 cup applesauce, no sugar added
1 tsp salt
3/4 tsp baking soda
1/4 tsp. nutmeg
1 tsp. cinnamon
1 egg
1 3/4 cups flour, whole wheat

Recipe Directions for Banana Oatmeal Cookies

  1. Cream sugar with butter.

  2. With mixer on low (#1 or #2) add applesauce, cinnamon, nutmeg, salt, and baking soda.

  3. Slowly add in 3/4 cup flour.

  4. Add in beaten egg.

  5. Finish adding flour.

  6. Add in 1 cup of mashed bananas.

  7. Stir well.

  8. Add in oats and walnuts.

  9. Drop batter by 1 tablespoon on ungreased cookie sheet.

  10. Bake in 400 degree oven for 10 minutes.

  11. Hint: Making cookies smaller than tablespoon will not give you a cookie that is as moist as when using a full tablespoon.
