Easy recipe for using over-ripe bananas. If you don't have buttermilk, just substitute regular milk plus 1tsp vinegar or lemon juice.

1/2 cup Butter
1/2 cup Sugars, Granulated
1/2 cup, packed Sugars, Brown
1 tsp Vanilla Extract
2 large Egg, Whole
1 1/2 cup, mashed Bananas
3/4 cup Gold Medal All Purpose Flour
3/4 cup Whole Wheat Pastry Flour
3/4 cup dry Old Fashioned Quaker Oats
3/4 teaspoon Baking Soda
1 teaspoon Baking Powder
0.33 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
0.33 cup, packed Sugars, Brown
3 tbsp Butter
1/4 cup Gold Medal All Purpose Flour
1/4 cup Chopped Walnuts

Recipe Directions for Banana Oatmeal Coffee Cake

  1. Preheat oven to 375 degrees F.

  2. TOPPING: Mix last four ingredients until crumbly. Set aside.

  3. CAKE: Cream butter and sugars until fluffy. Add eggs and vanilla and stir to combine. Beat in bananas (mashed). In a separate bowl, mix white flour, wheat flour, oatmeal, baking soda, and baking powder. Add flour mixture and buttermilk to the butter and sugar mixture. Pour into a greased 9 inch square pan. Put on topping and bake at 375 degrees for 25-30 minutes.
