3 bananas
2 1/2 cups rolled oats
1 cup dates
1/3 cup unsweetened applesauce
1 1/2 teaspoon vanilla extract
3 apples
1/4 cup walnuts
2 tsp cinnamon
1 tsp nutmeg
1/8 tsp ground cloves
1/8 tsp allspice
1/4 cup coconut
1/4 cup wheat germ
1/3 cup honey
1 tbsp ground flaxseed

Recipe Directions for Banana Oatmeal Coconut cookies/bars

  2. 1. Preheat oven to 350 (325?) degrees F (175 degrees C).

  3. - Dice up the apples

  4. 2. In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.

  5. 3. Bake for 20 minutes in the preheated oven, or until lightly brown. (I also reduced the heat to 325 and the time to 15 minutes.)--> our oven: bake at 300 degrees for 14-15 minutes. Let cool on the baking trays for 7-12mins to crisp it up so it won't fall apart...really really loose dough

  6. Mods for next time: Slightly increase oats maybe 1/4c and add more cinnamon (maybe 1 extra tsp). These did not turn out sweet, just right for me. Wouldn't hurt to make the honey 1/2c instead of 1/3
