Recipe Ingredients for Banana Oatmeal Bread

1.25 cup Gold Medal All Purpose Flour
0.5 cup, unpacked Sugars, Brown
0.5 tsp Salt, Table
0.5 tsp Baking Soda
1/4 tsp Baking Powder
3 1tsp Vegetable Oil, Canola
1 large Egg, Whole
2 large Egg, White
3 medium (7" to 7-7/8" long) Bananas
1 cup Old Fashioned Oats
0.5 tsp Cinnamon, Ground
1 tsp Vanilla Extract

Recipe Directions for Banana Oatmeal Bread

Preheat oven to 350 degrees. In a large bowl, stir together dry ingredients - flour through baking powder. In a separate bowl, whisk together 1 egg and 2 egg whites. Add to dry mixture. Add canola oil. Mix thoroughly. In a smaller bowl, mash 3 ripe bananas using a fork or potato masher. Add bananas, oatmeal, cinnamon, & vanilla to batter. Mix well. Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 35-45 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.
