Recipe Ingredients for banana oatmeal bread

1.25 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
4 oz Light Brown Sugar
0.5 tsp Salt, Table
4 grams Baking Soda
0.25 Teaspoon Baking Powder
1 tbsp Vegetable Oil, Canola
1 large Egg, Whole
2 large Egg, White
3 medium (7" to 7-7/8" long) Bananas
1 cup dry Old Fashioned Quaker Oats
1 tsp Cinnamon, Ground

Recipe Directions for banana oatmeal bread

  1. Preheat oven to 350. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.

  2. In a smaller bowl,, mash bananas with a potato masher or fork. Add bananas and oatmeal to batter.

  3. Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to the touch, 45-55 min. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.

  4. Variation: instead of 3 bananas, use 2 bananas and 1/2 c applesauce, use whole wheat flour instead of all-purpose, make muffins instead of a loaf.
