Healthier version of banana bread

Recipe Ingredients for Banana Oatmeal Bread

1 cup uncooked old fashioned oats
3 large bananas
2 egg whites
1 large egg
3 tsp canola oil
1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1/2 c brown sugar
1 1/4 c all-purpose flour

Recipe Directions for Banana Oatmeal Bread

  1. Preheat oven to 35O F.

  2. In a large bowl, stir together dry ingredients, add oil and eggs, mix thoroughly

  3. In a smaller bowl, mash bananas (with a fork or potato masher) add bananas and oatmeal to batter

  4. Spray loaf pan with cooking spray, pour batter into pan and bake for about 45-55 minutes, until top of loaf is firm to touch

  5. Remove from oven, cool in pan for 5 minutes

  6. Flip out of pan and cool on rack for 10 minutes
