A modified version of the Cooking Light recipe found in their June 2000 issue. My modifications mean less fat and a bit more fiber.

Recipe Ingredients for Banana Oat Quick Bread

1 cup whole wheat pastry flour
1/2 cup unbleached flour
1 cup oats
1/4 cup Splenda brown sugar blend
2 tbsp Splenda brown sugar blend
2 1/2 tsp baking powder
1/4 tsp salt
1 cup organic banana
1/2 cup organic skim milk
1/2 tbsp lemon juice
1/4 cup applesauce
1/4 cup egg beaters
1/4 cup oats
2 tbsp walnuts, finely chopped
1 tbsp Splenda brown sugar blend
2 tbsp light butter

Recipe Directions for Banana Oat Quick Bread

  1. Preheat oven to 350

  2. Pour skim milk and lemon juice in a small bowl. Let stand for 10 minutes.

  3. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and next 4 ingredients(flour through salt) in a large bowl: make a well in the center of mixture. Combine banana, skim milk, applesauce, and egg beaters in a bowl; add to flour mixture. Stir just until moist. Spoon batter into an 8 x 4 inch loaf pan coated with cooking spray.

  4. Combine 1/4 cup oats, walnuts, 2 tablespoons of Splenda brown sugar, and light butter, and sprinkle over batter. Bake at 350 or until a wooden pick inserted in the center comes out clean. Cool 5 minutes in pan on a wire rack; remove from pan and cool completely on wire rack
