Recipe Ingredients for Banana and Oat Pikelets (pancakes)

140 grams Plain All Purpose Flour
3 tsp Baking Powder
0.5 cup Oat Bran
2 teaspoon Sugar
1 serving Brownes NO Fact Vanilla Yoghurt
1 medium (7" to 7-7/8" long) Bananas
1 serving Extra Light Olive Oil
4 large Egg, White
2 medium (7" to 7-7/8" long) Bananas
1 serving Natural Honey

Recipe Directions for Banana and Oat Pikelets (pancakes)

Sift the flour and baking powder into a large bowl. Stir in the oat bran and sugar. In a separate bowl mid together the yoghurt, 1 banana (mashed), olive oil, vanella and 150ml of water. Tip the yoghurt mixture into the lfour mix and stir until just combined. Using an electric beater, beat the egg whites into firm peaks. This will take about 2 minute. Stir one third of the egg white trhough the pikelet batter, then fold the remaining egg white through. Heat a large non-stick pan over medium heat. Spoon 1/4 cup of batter per pikelet into the pan. Cook for 2 minutes, or until bubbles appear onthe surface, then flip each pikelet and cook for a further 1 1/2 mins or until lightly golden underneath. Keep the pikelets warm in a moderat oven while cooking the remaining batter. Serve warm with some banana slices and a drizzle of honey.
