Recipe Ingredients for Banana-Oat Muffins

1 cup Gold Medal All Purpose Flour
0.67 cup Quick Oats
16 tsp No Calorie Sweetener
3 tsp Baking Powder
0.5 tsp Baking Soda
0.13 tsp(1 g) Sea Salt
1 cup(245 g) Milk, Buttermilk, Fluid, Cultured, Lowfat
2 tbsp Vegetable Oil, Canola
2 tsp Vanilla Extract
4 tbsp Egg Whites
1 tsp Cinnamon, Ground

Recipe Directions for Banana-Oat Muffins

  1. Preheat oven to 350

  2. Mix dry ingredients in medium-sized bowl

  3. Whisk together wet ingredients in separate bowl, add mashed bananas and blend thoroughly

  4. Make a well in the center of the dry ingredients and add wet ingredients

  5. Mix until just blended

  6. Coat muffin pan with cooking spray and spoon equal amounts into each cup.

  7. Bake 20 minutes, then let stand 2-3 minutes before removing from tin.

  8. Alternately can be made as bread in 9"x5" loaf pan, baked for 50 minutes and allowed to cool for 10 minutes before slicing.
