Low Sugar Banana muffins w/ oats.

Recipe Ingredients for Banana Oat Muffins

1 cup barley flour
1/4 cup rolled oats
1 tablespoon baking powder
1/2 teaspoon baking soda
1 tsp cinnamon
1/8 teaspoon kosher salt
2 large bananas
1/4 cup applesauce
1 egg
1/4 cup coconut milk
1/4 cup flax

Recipe Directions for Banana Oat Muffins

  1. Oven set to 350 degrees. Mix dry ingredients in a Medium bowl. Mash bananas, mix all wet with the bananas then add to the dry and mix until well combined.

  2. Pour into muffin tins, lined or oiled, half way. Bake for 20-25 minutes.
