I combined two recipes to get this one because I had no eggs and I wanted to use oats. I hope this turns out alright...

Recipe Ingredients for Banana Oat Muffins

16 tsp Domino Light Brown Sugar
16 tbs Domino Premium Pure Cane Granulated Sugar
38 grams Cinnamon Classic Flavors
2 cup All Purpose Flour
2 Teaspoon Baking Powder
0.25 teaspoon Baking Soda
3 medium banana Bananas
1/2 cup dry Quick Quaker Oats

Recipe Directions for Banana Oat Muffins

  1. In a large bowl, cream sugar and shortening for about 5 minutes.

  2. Combine flour, baking powder, baking soda, and salt; add to creamed mixture alternately with bananas, beating after each addition.

  3. Spoon into muffin pan.

  4. Bake at 350 degrees F for 45 - 50 minutes or until muffins test done with a toothpick. Cool in pan for 10 minutes before moving onto a wire rack.
