Recipe Ingredients for Banana Oat Muffins

3 cups all-purpose flour
2 cups rolled oats
1 cup white sugar
1 tablespoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 egg
1 cups milk
2/3 cup applesauce
1 teaspoon vanilla extract
2 cups mashed bananas

Recipe Directions for Banana Oat Muffins

  1. Combine flour, oats, sugar, baking powder, soda, and salt.

  2. In a large bowl, beat the egg lightly. Stir in the milk, applesauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a muffin tin with paper bake cups, and divide the batter among them.

  3. Bake at 400 degrees F (205 degrees C) for 15 to 20 minutes.
