A great way to use up overripe bananas.

Recipe Ingredients for Banana Oat Muffins

1 1/2 cups flour
1 cup rolled oats
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 large egg
3/4 cup whole milk
1/3 cup olive oil
1/2 cup chocolate chips
1/4 cup cranberries, dried
1/2 tsp vanilla extract
1 tsp butter
2 bananas

Recipe Directions for Banana Oat Muffins

  1. Preheat oven to 400 F. Grease a 12-muffin tin with butter.

  2. Combine dry ingredients; stir well.

  3. In a large bowl, combine beaten egg, mashed banana, milk, olive oil, vanilla. Add dry ingredients. Stir until just moistened. Spoon into muffin tin.

  4. Bake at 400 F for 15-18 minutes.
