Recipe Ingredients for Banana-Oat Muffins

1 1/3 c all-purpose flour
3/4 c rolled oats
1/2 c sugar
2 T. baking powder
1/4 t. salt
1 egg, beaten
1/2 c skim milk
2 bananas, mashed
1/4 c cooking oil
1/4 c all-purpose flour
1/4 c brown sugar
1 t. cinnamon
2 T. rolled oats
2 T. butter

Recipe Directions for Banana-Oat Muffins

Preheat oven to 400 degrees F. Combine flour, oats, sugar, baking powder, and salt in a medium bowl. Set aside. Blend egg, milk, banana, and oil. Pour into flour mixture and mix until just moistened. Mix flour, brown sugar, and cinnamon in a small bowl. Cut in butter and mix until crumbly. Add rolled oats. Fill each muffin cup 2/3 full, then top each muffin with the cinnamon mixture. Bake for 18-20 minutes, until a toothpick inserted into the center comes out clean.
