Recipe Ingredients for Banana oat cookies

3/4 cup shortening
1 cup packed brown sugar
1 egg
4 bananas, ripe, mashed
1 teaspoon vanilla extract
1 cup whole wheat flour
3/4 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups rolled oats

Recipe Directions for Banana oat cookies

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Sift flour, and combine with baking soda, salt, and cinnamon.

  3. In a stand mixer, cream together shortening and brown sugar.

  4. Add egg, banana and vanilla.

  5. Add dry ingrediets, including oats.

  6. Drop by rounded spoonfuls onto greased cookie sheets.

  7. Bake for 10-11 minutes in preheated oven.

  8. Allow cookies to cool on cookie sheets for 5 minutes before transferring to a wire rack to cool.
