Banana and Oat Bars Recipe

Though high in sugar, these bars are very low in fat and full of healthy oats. They contain just 87 calories for a filling snack. N.B. Try different combinations of white and dark sugar eg 2 tbsp dark moscovada with 3 of white. Try omitting the cinnamon and sultanas and add ground ginger and crystallised stem ginger - Yummy!

Recipe Ingredients for Banana and oat bars

110 g porridge oats
5 tbsp brown sugar
4 tbsp flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp bicarbonate of soda
100 g sultanas
225 g bananas, mashed
4 tbsp skimmed milk
2 egg whites
1 tsp vanilla extract

Recipe Directions for Banana and oat bars

  1. Preheat oven to 180C/350F/Gas mark 4 and grease a 7x11" baking tray

  2. Mix together the dry ingredients.

  3. In a separate bowl mix together the rest of the ingredients.

  4. Mix everything together and beat well

  5. Pour into prepared tin and bake for about 30 minutes, but check after 25. Be careful that they don't catch!
