From Green Lite Bites, with brown sugar subbed for molasses and pecans added in. Also baked one normal loaf instead of two minis.

Recipe Ingredients for Banana Nut (Pecan) Bread

1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
2 large bananas
1/4 cup applesauce (61g)
1 tsp vanilla extract
1 tbsp honey (21g)
1 tbsp brown sugar
1 egg
2/5 cup pecans

Recipe Directions for Banana Nut (Pecan) Bread

  1. Preheat the oven to 350 degrees.

  2. In a small bowl mix the flour, baking soda, baking powder, and salt.

  3. In a larger bowl mash the banana. Add the applesauce, vanilla, honey, brown sugar and egg to the banana and whisk until well combined and frothy.

  4. Spray a loaf pan with non-stick cooking spray.

  5. Pour the dry ingredients into the wet and stir to they just combine. Don?t over mix. You don?t have to get every last bit of flour absorbed. It?s better to leave some then overmix. Add pecans.

  6. Bake for about 30 minutes, or until toothpick comes out clean.
