Adapted from the biggest loser cookbook. this recipe uses soy milk as a substitution for all of those lactose intolerant people out there.

Recipe Ingredients for banana nut oats

1/2 banana, very ripe
1/2 tsp vanilla extract
1 c soy milk, light
1/2 c rolled oats
1 tbls walnuts

Recipe Directions for banana nut oats

  1. Mash the banana with the vanilla extract and set aside.

  2. Combine the milk and a pinch of salt in a medium saucepan and heat until almost boiling.

  3. Add the oats and cook, stirring for 1 to 2 minutes, or until creamy

  4. stir in the banana mixture

  5. remove from heat and cover. let stand for about 5 minutes, then serve with chopped walnuts
