High in fat, but the good kind from walnuts. Oat bran lowers bad cholesterol and the bananas make these muffins very moist.

Recipe Ingredients for Banana-Nut Oatbran Muffins

3/4 cup whole wheat flour
47 g oat bran, raw
1/3 cup all-bran
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
2 bananas
1/4 cup unsweetened soy milk
1 egg
1 egg white
1 tablespoon canola oil
1 tsp vanilla
1 cup walnuts

Recipe Directions for Banana-Nut Oatbran Muffins

  1. Coarsely chop and then toast the walnuts. Set aside.

  2. Put all-bran buds in a blender or food processor. Blend until broken down into a fine powder. Sift together all dry ingredients, except for the nuts.

  3. In a separate bowl, mash the ripe bananas and add the additional wet ingredients.

  4. Mix the wet ingredients into the dryi ingredients until just blended. Add walnuts and fold into muffin mixture.

  5. Bake in 425F oven for 15 minutes in lined muffin tins. Allow to cool.
