Recipe Ingredients for Banana Nut Muffins

1/4 cup salted butter
1 cup brown sugar
2 eggs
2 bananas
1 tbsp soy milk
2 cups bread flour
1/4 tsp salt
1 tbsp cinnamon
1 tsp ground nutmeg
1 pinch ground cloves
1/4 cup chopped pecans

Recipe Directions for Banana Nut Muffins

Cream room temperature butter and sugar. Mix in eggs. Mix in bananas and milk. Slowly add dry ingredients (flour, salt, cinnamon, and spices. Line muffin tray with liners and spoon in batter until they are 3/4 full. Sprinkle the chopped pecans over the top. Bake at 350 for 10-20 minutes. The bake time will vary depending on your muffin tin. Check to see if they are done at about 10 minutes by sticking a toothpick in a muffin and pulling it back out. They are done when no batter sticks to the toothpick.
