Wheat free dairy free banana nut muffins made with brown rice flour and oat bran

Recipe Ingredients for Banana Nut Muffins

2 eggs
1/2 c rice milk
4 tbsp honey
4 tbsp turbinado sugar
3 tbsp olive oil
1 c brown rice flour
1 c oat bran
2 tsp baking soda
1 tsp baking powder
1/8 tsp salt
2 c banana, mashed
1/2 c walnuts, chopped

Recipe Directions for Banana Nut Muffins

  1. With a mixer beat eggs, milk, honey, sugar and oil for one minute.

  2. Add other ingredients and mix until well combined.

  3. Pour into pans and bake 25 minutes at 350 degrees.

  4. Serve warm or within 24 hours. Freeze extras.
