Banana Nut muffins made with whole wheat flour, bananas and lots of flavor. Cranberries optional, but add a nice burst of sweetness. These are so good you won't even notice they're under 100 calories each!

Recipe Ingredients for Banana Nut Muffins

6 cup whole wheat flour
6 tablespoon baking powder
3 teaspoon baking soda
3/4 teaspoon kosher salt
6 cups bananas, mashed
1 1/2 cups Splenda
1 1/2 cups applesauce
6 egg
3 tablespoon vanilla extract
3/4 cup pecan pieces
3 tablespoon Cinnamon
3 teaspoon Ground Ginger
3 tablespoons flax seeds

Recipe Directions for Banana Nut Muffins

  1. Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with nonstick cooking spray

  2. Mix together flour, baking powder, baking soda, salt and spices. In a separate bowl, beat together banana, Splenda, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

  3. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
