A great way to use over-ripened bananas! If you prefer a moister muffin, feel free to add 3 Tbsp. butter or oil to recipe. Just don't forget to add the extra calories!

Recipe Ingredients for Banana Nut Muffins

1 cup whole wheat flour
1 cup flour
3 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 cup milk
2 bananas
1/2 cup almonds

Recipe Directions for Banana Nut Muffins

  1. Preheat oven to 400 degrees.

  2. Chop almonds to small pieces. In a large bowl, mix flours, baking powder, salt, and almonds together.

  3. In a small bowl, beat egg. Add milk and bananas to bowl, mix. Add mixture to dry ingredients, stir until barely moistened.

  4. Fill greased muffin cups 2/3 full. Bake at 400 degrees for about 20 minutes.
