Recipe Ingredients for Banana Nut Muffins

4 bananas, ripe bananas smashed
1/6 cup butter, melted
1/6 cup margarine, melted
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 1/2 teaspoon baking powder
1/8 teaspoon salt
1 1/2 cup of flour
1/8 cup walnuts, roasted and chopped

Recipe Directions for Banana Nut Muffins

  1. No need for a mixer with this recipe.

  2. Preheat the oven to 350°F.

  3. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

  4. Mix in the sugar, egg, espresso and vanilla.

  5. Sprinkle the baking soda and salt on top,

  6. then mix in.

  7. Add the flour, mix until it is just incorporated.

  8. Fold in the chopped walnuts.

  9. Pour mixture into a prepared muffin tin.

  10. Bake for 25-30 minutes.

  11. Check for doneness with a toothpick.

  12. If it comes out clean, it's done.

  13. Cool on a rack.

  14. Optional: Mix in a shot of espresso to boost flavor.
