I derived this recipe, if you would like you muffins to be sweeter add 1/4 cup more sugar; I found that the riper your bananas are the sweeter the mixture. I am desensitizing myself to sugar, so I found that using less sugar suited my taste. The muffins are dense and moist, however if you would like a fluffier muffin, I suggest add 1/4 teaspoon more baking powder.

Recipe Ingredients for Banana Nut Muffins

1 1/2 cups whole wheat flour
1 3/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/8 teaspoon of salt
2 egg whites
1 1/4 cup mashed bananas
1/2 cup raw sugar
1/3 cup unsweetened applesauce
1/2 cup chopped walnuts

Recipe Directions for Banana Nut Muffins

  1. Preheat oven 350 degrees

  2. Shift and mix dry ingredients (except walnuts)

  3. Stir in wet ingredients

  4. Fill prepared muffin pan approximately 2/3 with mixture, or use muffin paper.

  5. Cook until a toothpick comes out clean about 20 minutes

  6. When using muffin paper, you will have to let the muffins cool completely so they will separate cleanly from the muffin paper
