Use ripe bananas, and you'll be surprised with the extra sweet, moist wholesome muffins.

Recipe Ingredients for Banana Nut Muffins

2 bananas
1 cup whole wheat flour
1 cup plain flour
1/2 cup SPLENDA Sugar blend for baking
2 eggs (low-fat)
1 tsp vanilla
1/2 cup buttermilk
1 stick butter
1 tsp salt
1 tsp baking powder
1/2 tsp. baking soda
1/2 cup chopped pecans

Recipe Directions for Banana Nut Muffins

Preheat oven 30 400. Prepare muffin pan. beat together butter and sugar, add eggs, 1 at a time. Beat in bananas until smooth. Mix tog. flour, salt, baking powder and baking soda. Alternately stir flour mixture and buttermilk into egg mixture until dry ingredients are moist. Sitr in nuts and vanilla. Spoon batter into prepared pan. Bake 15-18 min.
