This is a low-sugar (has splenda brown sugar blend), low calorie banana nut muffin recipe. Also, can be made into a loaf and baked for 40 to 45 minutes. If making banana nut bread, then you may have to cover with alumimun foil for last 10 minutes to ensure doneness without over-browning.

Recipe Ingredients for Banana Nut Muffins

2 eggs
1/2 cup splenda no calorie
1/2 cup splenda brown sugar
2 bananas
1 tsp. baking soda
1/4 tsp. cinnamon
1/2 cup buttermilk
1 tsp. vanilla extract
1/2 cup chopped walnuts
1 tsp. salt
2 cups whole wheat flour

Recipe Directions for Banana Nut Muffins

  1. Preheat oven to 375

  2. Combine ingredients in the order listed

  3. Evenly distribute into muffin tin

  4. Bake 30-35 minutes or until toothpick comes out clean
