These are a nice little snack and since they are made with whole wheat flour they are better for you, but still just as tasty. If you like banana nut bread you will love these.

Recipe Ingredients for banana nut muffins

2 cups whole wheat flour
1 cup brown sugar
3/4 cup smart balance
4 bananas
1/2 cup pecans
1 tsp baking soda
1/2 tsp salt
2 eggs

Recipe Directions for banana nut muffins

Make sure your bananas are over ripe. Peel them and mash two with a fork in a small bowl. Put the other two in a large bowl with sugar and beat for three minutes until fluffy. Beat in melted butter, eggs, 1/2 tsp vanilla extract. In a separate bowl mix the flour, backing soda, and salt. combine the dry mixture to the wet. Next fold in the two mashed bananas and a 1/2 cup chopped pecans. preheat oven to 375. grease two muffin pans and fill half way. bake for 18-20 minutes and allow to cool.
