Recipe Ingredients for Banana Nut muffins

3 ripe bananas
1/2 cup yogurt, plain and low-fat
1 large egg
2 tablespoons canola oil
1/4 cup light brown sugar
1 teaspoon vanilla
1/2 cup oatmeal
1 teaspoon baking soda
1/8 teaspoon kosher salt
1 1/3 cups whole wheat flour
1/2 cup dried blueberries
1/4 cup chopped pecans

Recipe Directions for Banana Nut muffins

Mash bananas in large mixing bowl. Add yogurt, egg, canola oil, brown sugar, oatmeal, and vanilla. Mix well. Add dried blueberries. Allow this mixture to sit for 15 minutes. Add baking soda to liquid mixture, and stir well. Add whole wheat flour and pecans and stir lightly with a fork just until mixture is moistened. Fill muffin cups 1/2 full and bake in 350 oven for 20 - 25 minutes. Remove muffins from muffin tin immediately and cool on rack.
