A vegan version of Banana Nut Muffins

Recipe Ingredients for Banana Nut Muffins

1/3 cup vegetable shortening
1/2 cup sugar
1/2 cup applesauce
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ginger
1 cup banana, mashed ripe
1/2 cup chopped walnuts
1/4 cup chopped walnuts
3 tablespoons brown sugar

Recipe Directions for Banana Nut Muffins

  1. Cream together shortening and sugar. Add applesauce, mix well. Add dry ingredients to creamed mixture alternately with banana, blending well after each. Add 1/2 cup nuts. Separately, mix remaining chopped walnuts and 2 tablespoons brown sugar. Set aside.

  2. Place muffin cups in muffin pan and fill cups about 2/3 full. Sprinkle 1 teaspoon-ish brown sugar walnut mix on top of each muffin.Bake at 350 for 25 minutes.
