Recipe Ingredients for Banana Nut Muffins with Oatmeal Streusel

1 1/2 cups flour
1/2 cup rye flour
2/3 cup packed brown sugar
2 tsp. baking powder
1/4 tsp. ground cinnamon
1/4 tsp. salt
2 bananas, mashed
3/4 cup rice milk
3 tbsp canola oil
1/2 tsp. vanilla extract
1 egg
1/4 cup flax seed
6 tbsp. regular oats
5 tbsp. flour
2 tbsp. brown sugar
2 tbsp. butter, softened, not melted
1/4 tsp. ground cinnamon

Recipe Directions for Banana Nut Muffins with Oatmeal Streusel

  1. Set out 12 muffin liners in a muffin tray.

  2. Mix flour, rye flour, brown sugar, baking powder, cinnamon, salt in a large bowl, set aside.

  3. In a smaller bowl, mash bananas, mix with milk (any kind of milk you have), canola oil, vanilla, egg.

  4. Fold the banana mixture into the flour, mix until wet.

  5. Add flax seed (or any other nut)

  6. Divide mixture into 12 muffin cups.

  7. To make the Streusel: Add oats, flour, brown sugar, butter, and cinnamon into a small bowl. Blend with a pastry blender or two knives. Spread evenly over the muffins.

  8. Bake at 375 for 22 minutes, or until a toothpick comes out clean.

  9. Freeze any extra muffins and eat them before a rigorous swim practice.
