Fiber is better than label because these are made from freshly milled whole wheat. The whole grain, germ and all, is mixed into the recipe. Freshly milled wheat has many nutritional benefits, so grade is probably better than "C"

Recipe Ingredients for Banana Nut Muffins (homemade)

2 1/4 cups whole wheat flour (hard red wheat)
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup buttermilk
1 egg
1/2 cup oil
1/2 cup raw wildflower honey
3 mashed bananas
1/2 cup walnuts
1 tsp. vanilla extract
1 tsp. cinnamon
1 2/5 tsp. nutmeg

Recipe Directions for Banana Nut Muffins (homemade)

  1. Measure dry ingredients into mixing bowl.

  2. Add liquids and mix just until well blended.

  3. Add mashed bananas,nuts,cinnamon and nutmeg.

  4. Drop by spoonfuls into greased 12 cup muffin pan.

  5. Bake at 400 degrees for 15-20 minutes.
