Recipe Ingredients for Banana Nut and Ginger Bread

110 g splenda brown sugar
110 g mashed bananas
66 g egg whites
1/2 teaspoon vanilla extract
1 tablespoons unsweetened applesauce
95 g all-purpose flour
95 g whole wheat flour
1 teaspoons baking soda
1/2 teaspoon salt
1 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/2 tablespoon ground cardamom
1/4 teaspoon ground cloves
8 oz dark beer
110 g dates, pitted and chopped
1 tablespoons minced fresh ginger root

Recipe Directions for Banana Nut and Ginger Bread

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.

  2. In a large bowl cream the brown sugar, banana, eggs, and vanilla. For moister bread, add oil, if desired.

  3. In a separate bowl, sift together 3 cups flour, baking soda, salt, cinnamon, allspice, cardamom, and cloves. Alternately blend the flour mixture and beer into the creamed mixture.

  4. Stir in the dates and ginger to the mixture and blend well. Pour into two pans in a 350 degree F (175 degrees C) oven for 1 hour, or until inserted toothpick emerges dry and clean.
