Make sure bananas are fully ripened. This is super fattening with icing but I get request for it over and over on special occasions.

Recipe Ingredients for Banana Nut Cake

2 1/3 cups flour
1 2/3 cups sugar
1 1/4 cups mashed banana
1 cup shortening
2/3 cup nonfat buttermilk
3 eggs
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
2/3 cups chopped walnuts

Recipe Directions for Banana Nut Cake

  1. Heat oven to 350. Grease and flour 13 x 9 x 2 pan or 2-9" round pans. Beat all ingredients in large mixer bowl on low spped, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally for 3 minutes. Pour into pan(s).

  2. Bake until wooden pick inserted in center comes out clean, oblong 45 to 50 minutes, layers 35 - 40 minutes. Cool. Frost with cream cheese frosting.
