Recipe from Good Housekeeping Cookbook - instead of buttermilk, I made my own by mixing 1 tbsp. lemon juice and adding enough milk to make 1 cup of liquid - let sit 5 minutes - used 2/3 cup of this instead of buttermilk; Also, I put all of the batter in a bundt pan but cake didn't rise properly in the center, perhaps there was too much batter, next time I will try making one bundt and another small loaf pan.

Recipe Ingredients for Banana-Nut Cake

1 cup butter
1 1/2 cups sugar
3 1/2 cups flour
2 large ripe bananas
2/3 cup buttermilk
1 tbsp. baking powder

  4. Pour batter into pan. Sprinkle reserved flour-butter mixture over batter, Bake 55 to 60 minutes, until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack 10 minutes, remove cake from pan; cool completely on rack.
