Recipe Ingredients for Banana Nut Bread

3/4 cup sugar
1/2 cup shortening
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup (about 3) bananas, mashed
1 tbsp lemon juice
1 cup walnuts, chopped

Recipe Directions for Banana Nut Bread

  1. Cream sugar, shortening and eggs until light.

  2. Add soda and salt to flour (not sifted). Stir to blend.

  3. Add blended dry ingredients to creamed mixture alternately with mashed banana and lemon juice. Stir until all ingredients are moistened.

  4. Stir in nuts.

  5. Spread in well-greased 9x5x3-inch loaf pan and bake at 350 for 55-60 minutes or until toothpick inserted in center comes out clean. Or divide into approx. 18 baking cups and bake at 350 for 20-25 minutes.

  6. Remove from pan immediately. Cool on rack.
