This is a great recipe to have when there are guests to help eat it up. It makes a nice big loaf of bread, or you could divide it into two pans and make two smaller loaves.

Recipe Ingredients for Banana Nut Bread

2 bananas (mashed)
2 eggs
1/4 c skim milk
1/2 c canola oil
1 3/4 c whole wheat flour
1 1/2 c sugar
1 c pecans (chopped)
1 t baking soda
1 t vanilla
1/2 t salt

Recipe Directions for Banana Nut Bread

  1. Preheat oven to 325 degrees

  2. Mash bananas and add eggs to bowl

  3. Add wet ingredients and mix together well

  4. Add dry ingredients (don't sift the flour) and mix until all ingredients are blended

  5. Bake for about 45 minutes or until a toothpick inserted in the top comes out clean.
