Delicious, low calorie banana nut bread.

Recipe Ingredients for Banana Nut Bread

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
2 egg whites, lightly beaten
1 cup ripe banana (2-3 medium size), mashed
3/4 cup sugar
3 tablespoons cooking oil
1 teaspoon finely shredded lemon peel
1/4 cup chopped walnuts

Recipe Directions for Banana Nut Bread

  1. In a large mixing bowl stir together the flour, baking powder, baking soda and salt.

  2. In a medium bowl stir together the egg whites, banana, sugar, cooking oil and lemon peel.

  3. Add to the flour mixture, stirring just till combined.

  4. Stir in the walnuts.

  5. Pour the batter into a nonstick 8x4x2 loaf pan.

  6. Bake in a 350˚F oven about 50 minutes or till a wooden toothpick inserted near the center comes out clean.

  7. Cool the bread in the pan on a wire rack for 10 minutes.

  8. Remove the bread from the pan and cool completely on the rack.
