Light and fluffy banana nut bread/muffins.

Recipe Ingredients for Banana Nut Bread/Muffins

1 1/2 cups flour
6 tbsp unsalted butter
2/3 cup sugar
2 eggs
1 tsp pure vanilla extract (vanilla bean paste)
1/2 cup buttermilk
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 tsp kosher salt
2 medium bananas, ripe and mashed
1/2 cup chopped walnuts

Recipe Directions for Banana Nut Bread/Muffins

  1. Preheat oven to 350 degrees.

  2. Cream butter and sugar together for two minutes. In a separate bowl, mix together flour, salt, cinnamon, baking soda, and baking powder. Add this dry mixture to the butter/sugar mixture and mix with a wooden spoon until it resembles wet sand.

  3. In a separate bowl, lightly beat together eggs and vanilla bean paste. Add this mixture and the buttermilk to the flour/butter mixture and mix with wooden spoon until just combined. Gently fold in mashed bananas.

  4. Pour into greased loaf pan or ten muffin cups and sprinkle tops with chopped walnuts.

  5. Bake at 350 degrees for 50-60 minutes or until toothpick inserted in center comes out clean. Remove bread/muffins from pan within 5 minutes of removing from oven and place on wire rack to cool.
