Delicious banana nut bread or muffins made with whole wheat flour! Save your over-ripe bananas in the freezer, and use them in this recipe.

Recipe Ingredients for Banana Nut Bread or Muffins

1 cup butter
1 cup white sugar
1 cup packed brown sugar
4 large eggs, room temperature & slightly beaten
2 cups ripe bananas (6 whole), mashed
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 cups whole wheat flour
1 cup walnuts, chopped

Recipe Directions for Banana Nut Bread or Muffins

  1. This recipe makes 2 large (9 x 5) loaves OR 4 small (7 1/2 x 3 1/2) loaves OR 24 muffins.

  2. In a saucepan, melt butter and blend in sugar.

  3. Remove from heat and mix in eggs and banana, blending until smooth.

  4. Add vanilla.

  5. Combine white flour, salt, baking soda and wheat flour and stir into butter/sugar mixture.

  6. Stir in the nuts.

  7. Oil pans OR muffin tins well. For loaves, oil pans then line the bottom and long sides with wax paper or aluminum foil. Easy removal! Pour batter into pans.

  8. Bake in preheated 325 degree oven 75 minutes for large loaves OR 40 minutes for small loaves OR 20 minutes for muffins until bread tests done with wooden toothpick.

  9. Cool loaves/muffins on rack.
